Herbal Honeys and Vinegar

Sipping vinegars and herbal honeys have been used for centuries, historically used for preserving fruits and herbs but it also creates a delicious beverage! You can combine the two to make an oxymel, which is part sugar part acid (usually honey and apple cider vinegar) which extracts the herbal qualities and nutritional content differently than when you make teas. It makes a tasty herbal concoction that you can sip on its own, add to soda water or make mocktails/cocktails with it!

We will learn a handful of herbs to make these with and taste a few of my own herbal concoctions.
